Located at the original Riverside site, New Glarus Brewing sought to add a unique authentic wild fruit style cellar to their reprtoire of facilities.  This unique buildings exterior features a grass roof and is nested into the hilldside offering a cozy authentic feel.  The magic happens inside however, specifically in the 100-bbl coolship.  One of the biggest one in the country, this open air brewing technique results in a spontaneously fermented beer, exposed to wild yeasts, instead of cultivated/controlled strains.
